Violations: Found marina sauce prepared last night and not yet cooled below 41F at time of inspection. PIC will train cook staff on proper cooling procedures.

Found mini hamburgers at 101F, marina @ 47F. Both items were discarded.

Found cases of pork stored under leaking/dripping cooling fan in walk-in freezer. (Corrected)

Found the following equipment in need of repair: doors to meat room and meat cooler, door to walk-in freezer, cracked and damaged reach-in coolers and freezer wire shelving, damaged door to raw meat reach-in cooler, peeling and hanging caulking around fryer vent hood, caulk around warewash machine and 3 comp sink.

Found the following in need of cleaning: oven interior, roll cutter.

Found the following equipment in need of cleaning: mold around door and door seals to meat room, exterior of fryers, dust build-up on exterior of bakery ovens, mold around warewashing machine, dust accumulation on floor fans, grease build-up on exterior of old grease tank.

Found leaks in salad bar prep sink and handwashing sink.

Found multiple cracked floor and cove base tiles throughout kitchen area.

Found dust accumulation on air vents and ceiling tiles throughout kitchen area, found mold on wall around utility sink, found large amount of grease build-up under and behind old grease tank.

Comments: At least one PIC in this facility has successfully completed Level II training in food safety. Please apply for reciprocity with Ohio Department of Health to obtain their certificate. Reciprocity form was provided at the time of this inspection.
