Violations: Found there is no person on site that has completed the Level II managers training. Show proof that one person is signed up to take the class by July 10th.
Recommend manage and at least one other person on staff obtain at least Level 1 training until Level II can be taken. Gave PIC information.
Found custard powder not labeled with common name. PIC corrected.
Found trays of onion rings stored on a rack covered with a tray cover that was soiled with mildew. Had PIC take the cover out of service until a new, cleanable cover can be addressed.
Found a cracked lexan lid and several trays used to stored tongs on that were unable to be cleaned. Found a damaged set of tongs with the vinyl handle partially missing and a damaged screen to sift the batter with the screen torn in several areas. PIC to discontinue use and supply a new screen.
Found a magnetic knife holder on the wall that was made of wood and not properly designed to be easily cleanable and not transfer bacteria to the clean utensil. Discussed replacing. Found duct tape on the motor at the shake machine. Discontinue use of duct tape as it collects and transfers bacteria.
Found knobs on the warming units missing. Replace. Found the know for the cover to the whipped cream missing. Replace. Found damaged gaskets on the reach in freezer door and the shake machine. Replace damaged seals to provide an easily cleanable surface. Found the drain trays to both slushie machines damaged. Replace. Found the lid to the ice machine broken in several areas exposing insulation. Replace the lid.
Found the interior to the ice machine with mold buildup and the exterior vent area coated with a slimy substance that could cause contamination to the ice. Had PIC take the machine out of order until this can be properly cleaned and determine what is causing the issue.
Found interior trays to the steamer not cleaned from last night and soiled with food debris. Found many unclean dishes, lids, pans stored on the clean dish rack. Discussed with PIC that their cleaning methods must be increased and utilize and abrasive to remove grease and dirt. Found the interior bottom to the freezer soiled, the interior door and gaskets to the shake machine unit soiled.

Discussed cleaning and sanitizing of the slushie and icecream machines. All are being cleaned and sanitized every 7 days and labeled as such.
Found interior to equipment pieces and sides to equipment and fryers not being cleaned at a frequency to prevent buildup. Increase your cleaning schedule for these items.
Found pans not air dried before stacking. Allow all utensils to air dry to prevent bacterial growth.
Found no waste receptacle at the hand sinks in the kitchen for disposal of paper towels.
Found the dumpster area unkempt, soiled with litter and grease, the lid to the grease dumpster open and the exterior of both the grease and trash dumpster soiled. Discussed with PIC to clean more frequently.
Found interior trash container and dust pans soiled with refuse and an odor coming from the trash cans. All items must be cleaned more frequently to prevent buildup and possible attraction to insects.
Found many lights out in the back hall and front of the facility. Replace all burned out bulbs.
Found the floors, drain tray traps and drain pipes under the prep sink, 3 compartment sink and front hand sink soiled with dirt. Found the floors under the ice machine and under the fryer station soiled. Found the wall behind the hot dog roller soiled with food splash.
Found the area around the hot water heater in need of cleaning once all excess equipment is removed.
Found the outside room where the hot water heater is kept filled with boxes of unused equipment. Remove all items from this room as the hot water heater shall be kept free of debris. Found an unused ice machine in the employee restroom. Remove from premises.
