Kristina Heaton, the store’s owner and manager, said her focus is providing an array of cookbooks, kitchen “gadgets” and cooking classes.

Asked about the shop’s name, she said that once upon a time, she was an English major in college. “I’m pretty good at playing on words.”
She also knew that if she was to open a book store in 2018, that store would have to be different.
“There are only about 15 (cookbook stores) across the country,” Heaton said. “It has always been my dream to open a book store, but in this climate I can’t compete with a Barnes & Noble or an Amazon. I knew I needed a niche.”

She thinks she has found one.
“I’m going for a community feel here,” Heaton said. “Just coffee and baked goods every day. Just a place where people can come and hang out.”
She is encouraged so far.
“It’s exactly the kind of thing that people are looking for … So far, so good,” she said.

Once Upon a Thyme is open Tuesday to Saturday 10 a.m. to 7 p.m. and Sundays, noon to 5 p.m.
Classes will be offered primarily on Sunday afternoons and evenings during the week, she said.
