Violations: PIC was unable to show in a verifiable manner that staff had been trained on symptoms and reportable illnesses. Gave PIC handout to assist with training. Must have completed before next inspection.

Found raw ground beef and raw chicken stored over beef in the walkin refrigerator. Discussed with PIC the proper storage order. This was corrected and explained to staff.

Found milk, creamer and whipped topping stored at 57F in the unit by the bar. The TCS foods were taken back to the walkin and the unit was taken out of service due to it not being able to maintain

Repair the small refrigerator in the bar if it to be used to maintain TCS foods cold.

Found the water temperature device on the automatic dish machine not working. The thermometer should register the wash temperature and staff must assure the unit gets to the temperature the manufacturer recommends.

Found a spray bottle of bleach water at the waitress station not labeled with common name. PIC corrected. Label all bottles with common name to prevent contamination.

Comments: Went over new rules with PIC. Discussed with PIC that once an employee touches a raw meat with gloved hands, they may not touch ready to eat foods or tortilla shells with gloved hands due to cross contamination issues. The employee will need to remove gloves, wash hands and place on clean gloves.
