Violations: Reviewed menu for correct consumer advisory. The menu notifies the customer of the risk regarding undercooked foods. However, the menu does not denote with an asterisk the food items that may be undercooked. Therefore, this is misleading to the customer. Note: The owners will get together with the cooks and make the distinction regarding the food items the consumer advisory applies to for next menu print. The menu is being evaluated every 30 days and will be corrected by next menu print. To properly inform consumers, except for whole-muscle intact beef steaks, if an animal food such as beef, eggs, fish, lamb, milk, pork, poultry, or shellfish is served or sold raw, undercooked, or without otherwise being processed to eliminate pathogens, either in ready-to-eat form, or as a raw ingredient in another ready-to-eat food, the license holder shall inform consumers of the significantly increased risk of consuming such food by way of a disclosure and reminder using brochures, deli-case or menu advisory, label statements, table tents, placards, or other effective written means. The reminder shall include asterisking the animal-derived foods requiring disclosure to a footnote that states: (1) Regarding the safety of these items, written information is available upon request; (2) Consuming raw or undercooked meats, poultry seafood, shellfish, or eggs may increase your risk of foodborne illness; or (3) Consuming raw or undercooked meats, poultry seafood, shellfish, or eggs may increase your risk of foodborne illness, especially if you have certain medical conditions. To prevent contamination, food employees shall effectively restrain or cover hair to keep their hair from contacting exposed food, clean equipment, utensils or linens or unwrapped single-service or single-use articles. The kitchen was observed not using a temperature measuring device (metal stem thermometer) that was calibratable to ensure accuracy. The owner/s corrected immediately. (1) Utensils shall be maintained in a state of good repair or shall be discarded; (2) Food temperature measuring devices shall be calibrated as necessary to ensure their accuracy; (3) Ambient air temperature, water pressure, and water temperature measuring devices shall be maintained in good repair and be accurate within the intended range of use. Receptacles and waste handling units for refuse, recyclables, or returnables shall be: kept covered inside the FSO or RFE if they contain food residue and are not in continuous use, and after they are filled; or with tight-fitting lids or doors if kept outside. Observed no handwashing sign(s) posted at handwashing sink(s) in both bathrooms used by employees. A sign or poster that notifies food employees to wash their hands shall be provided at all handwashing sinks used by food employees. Correct By: 31-May-2017.
