Date of inspection: Aug. 9

Violations: Observed whipped butter, inside reach-in display cooler, being held cold at 51F. Ensure foods are held cold at or below 41F in order to limit the growth of bacteria. PIC voluntarily discarded approximately 25 portioned cups of whipped butter.

Observed red butter and feta cheese being stored in walk-in cooler past their discard dates. Ensure foods are discarded no longer than 7 days after their prep date in order to limit the growth of bacteria.

• PIC discarded 1 small container of red butter and 1 small container of feta cheese

Observed reach-in display cooler with ambient air temperature of 47.5F and salad prep cooler with ambient air temperature of 43F. Ensure coolers are repaired, replaced, or adjusted so that they can hold foods cold at or below 41F.

• It is recommended that ambient air temperature of coolers are at 36F-37F

• PIC was informed that no perishable foods shall be placed inside each cooler until they can hold foods cold at or below 41F.

Observed multiple food contact surfaces with build-up of food residue. Ensure food contact surfaces are broken down (if needed), washed, rinsed, and sanitized after use of every 4 hours, if they are used throughout hours of operation, in order to prevent contamination.

- Yellow and red cutting boards

- Scoops (from drawer)

- Knives (near three compartment sink)

- Smaller mixer (kitchenaid)

- Inside of large ice machine

Observed multiple non-food contact surfaces with build-up of food residue. Ensure non-food contact surfaces are cleaned more frequently and maintained so that they are free of build-up.

- Shelf where cutting boards are stored

- Spray nozzle at dish machine (including underside of nozzle)

- Underside of cappuccino machine

- Soda gun holster at bar

- Gaskets in bar cooler doors

Comments: Spoke with Pic regarding proper cooling of foods. Foods shall be cooled within 2 hours from 135F to 70F and within 4 hours from 70F to 41F or below.

- It is highly recommended that cooling logs are maintained for foods.

- PIC explained that soups are cooled using ice baths and an ice wand.

PIC informed that walk-in freezer door gasket is scheduled to be replaced.

PIC was informed to ensure all broken or chipped lids and containers are replaced.

A re-inspection shall occur 08/16/2016 or thereafter.
