Date of inspection: Nov. 8
Violations: Cooked and non-cooked pizza were observed being stored without being stamped. To limit microbial growth, all time-temperature control for safety food not being maintained at the appropriate holding temperatures shall have a time-stamp. Ensure any cooked pizzas not being immediately picked up or noncooked pizzas are time stamped.
The following non-food contact surfaces were observed with food debris build-up:
1. The bottom shelves of the prep tables
2. The dough mixer
3. Adjacent to the three compartment sink, the storage shelves
4. The soda box shelf
5. The back kitchen handwashing sink
6. The shelf above the back kitchen handwashing sink
7. The inside surfaces of the reach-in coolers
8. The shelves beneath the front counter
To prevent the harboring of pests, clean the above surfaces. When cleaning, ensure items are removed.
The drawer beneath the dough prep table was observed with food debris build-up. To prevent the harboring of pests and contamination of clean utensils, clean the drawer. When cleaning the drawer, ensure the utensils are removed and recleaned and resanitized.
Beneath the pizza oven and in the back storage area, boxes of single serve items were observed being stored on the floor. To allow for the floor to be cleaned and prevent contamination, move the boxes of single-serve items from below the pizza oven and place them and the ones located in the back storage area at least six inches off the floor.
The waste receptacles were observed with food debris build-up. To prevent the harboring of pests, clean the outside, and if necessary, the inside surfaces of the waste receptacles.
In the following areas, the floors and walls were observed with food and dirt debris build-up:
1. Beneath and behind the three compartment sink
2. Beneath and behind the soda fountain box shelving unit
3. Beneath and behind the shelving unit adjacent to the three compartment sink
4. Beneath and behind the prep tables.
To prevent the harboring of pests, clean the above floors in the above areas.
In the back kitchen area, house flies and what appeared to be drain flies or gnats were observed. To prevent contamination of food, ensure the back kitchen area is thoroughly cleaned, including the drains. If necessary, consult a licensed exterminator.
Comments: Reinspection will be conducted on or after 11/15/2016.
