Violations/comments: Observed employee drinks being stored on storage rack next to clean items. Observed raw shrimp being stored on top of beer and ready to eat foods. Corrected during inspection. Observed wet wiping cloths out of sanitizer on cutting board. Observed ice cream in walk in freezer being stored on the floor. Observed food in reach in sushi prep cooler in bar area that was not a proper cold holding temperature of 41 degrees F or less. Food was temped at 50 degrees. Observed reach in sushi cooler in bar not holding proper temperature. Observed gaskets on prep cooler behind grills that are coming apart from the equipment and need cleaned. Observed residual build up around prep sink, on handle and along the door of walk-in freezer, on handles of coolers and walk in cooler. Observed employee hat sitting on metal food tray with clean items. Observed the air gap between plumbing fixture and ice machine drainage line that was not sufficient to prevent back siphonage of contaminated water. Observed a scratch pad being stored in a hand-washing sink. Observed a black residual build up along FRP wall behind the dish area and a build up of debris on floor under bag in box syrups. Observed a build up of dust on shelving and black residual on FRP wall behind three-compartment sink in bar area. Observed presence of gnats in dish storage area and also near the pop syrup.
