An upcoming special dinner at Carvers Steaks & Chops is all about choices.

Not in the food menu — that’s pretty much set.

The choice that attendees must make is: Do I want Cognac or Champagne with my meal?

Carvers, at 1535 Miamisburg-Centerville Road (Ohio 725) in Washington Twp., will host a "Cognac or Champagne" dinner at 6:30 p.m. Feb. 28. Those making reservations will specify whether they'd like Cognac or Champagne pairings with their meal.

Here’s the menu for the special dinner:

Reception: Chandon Sparkling Rose

First Course

Hennessy Black or Chandon Blanc de Noirs

Smoked Salmon with Ginger Butter, Pumpernickel & Fresh Dill

Second Course

Hennessy VS or Moet Imperial

Pan Seared Foie Gras with Port Wine & Balsamic Reduction, sliced peaches; Mixed Baby Greens

Third Course

Hennessy VSOP or Veuve Clicqout Demi-Sec

Crispy Pork Belly with Glazed Honey

Fourth Course

Hennessy XO or Veuve Clicqout Yellow Label

Beef Tenderloin with Cognac Peppercorn Cream Sauce and Bacon Soy Glazed Brussel Sprouts

Dessert

Dom Perignon Champagne

Dark Chocolate Terrine with Orange

The cost of the event is $115 plus tax and tip. Reservations are required, and can be made by calling (937) 433-7099.
