Koji Burger adds another day of lunch service in downtown Dayton

After a two week break, Koji Burger is returning to downtown Dayton’s Fire Block’s District with three days of lunch service (CONTRIBUTED PHOTO).

Koji Burger is returning to downtown Dayton’s Fire Block’s District with three days of lunch service.

“At Koji Burger, we’re all about delivering an elevated burger experience and to keep up with the demand, we’re making some exciting changes starting this week,” Chef Zackary Weiner said in a social media video posted on Jan. 14. “We’re going to open up on Thursdays, and we’re going to be open from 11 a.m. to 2 p.m. for lunch service.”

Koji Burger is the brainchild of Chef Brendon Miller, who owns Jollity with Weiner. The concept was tested and developed during the 2022 Miami Valley Restaurant Association Winter Restaurant Week and has been a hit ever since.

“We’ve expanded our team to help with prep needs and service needs, but because we make everything in house, from the buns to cutting, aging and grinding all the beef to all the garnish, except for American cheese, there’s always a chance that we might run out of certain items,” Weiner said. “That’s the price of doing things the right way sometimes.”

To make a koji burger, Weiner said it takes the same amount of work and craftmanship as it does to make a dish on Jollity’s dinner menu.

“We appreciate your patience and understanding as we try to navigate growth, while staying true to our mission,” Weiner said. “Thanks for your support and we can’t wait to see you soon for a burger.”
