Pizza Bandit kitchen expands inside Yellow Cab Tavern

Grand opening planned for Sept. 25 featuring 12 to 16 customer favorite pies.

After making New York-style pizzas outside the Yellow Cab Tavern for the past five years, The Pizza Bandit is moving indoors to its new kitchen.

“I feel like this is just the beginning of the story,” said Brian Johnson, who owns the business with James Burton and Mark Jeffers. “We’ve had a real opportunity to test recipes, service styles and offerings in the restricted space of the truck and that forced us to get creative and learn. We’re going to carry all of that knowledge and experience with (us) into this new, much more developed, kitchen space to create even more tasty food for everyone.”

The grand opening of the new kitchen space will be Sept. 25.

With the kitchen expansion, the Pizza Bandit has tripled its space. Johnson said they are going from only being able to cook four pizzas at a time to cooking 12 to 15 pizzas at once. They also have more cold storage space — allowing them to expand menu offerings.

The Pizza Bandit will have a menu of 12 to 16 specialty pies that have been customer favorites over the years. This includes the Elote, Crab Rangoon and Cincy Chili pizzas.

New offerings will include calzones, salads, specialty bandit breads and desserts.

The Pizza Bandit started offering breakfast from 8 a.m. to noon on Saturdays and Sundays last weekend featuring thin, crispy pancakes with cinnamon and sugar, sausage gravy bandit boats and classic French omeletes.

Johnson said they are planning to offer a late night menu in the next month or two, which means the Pizza Bandit will be open until 2 a.m. on the weekends.

“We asked for the community’s help in making our dream kitchen come true and they came in full force in support of that dream. We could not be more excited to be making good on that promise! Hopefully we can exceed everyone’s expectations with all of our new pizza offerings, service hours, and special events,” Johnson said.

The Pizza Bandit is open 5 to 9 p.m. Tuesday through Thursday and 5 to 11 p.m. Friday and Saturday, in addition to weekend breakfast hours.
