“We will be beer snobs, offering only premium and locally crafted beers, our Texas beers notwithstanding,” Nuñez said. “We expect to begin creating beer pairings and cigar and beer nights, most of which will be member-appreciation nights.” The restaurant is open to the public, but launched as a co-op, with members receiving special benefits.

Texas Beef and Cattle Company opened in July 2016 in Dayton's Wright Dunbar Historic District. The restaurant bills itself as "Dayton's only South Texas-style BBQ Smokehouse." Nuñez is a Texas native who started smoking meats while serving in the U.S. Navy from 1984 to 1991. He has been catering festivals and weekend barbecue events in the Dayton area since 1998.
In mid-February, the restaurant expanded its hours to include lunch service.

Hours are 11 a.m. to 10 p.m. Thursday through Saturday, and on Sunday, the restaurant offers a “south-Texas-style Sunday brunch” from 10 a.m. to 1 p.m., and its regular menu from 1 p.m. to 5 p.m.
Catered events and private events are available. Texas Beef and Cattle delivers in the downtown Dayton area to parties of six or more, and will deliver throughout the Miami valley for parties of 20 or more, Nuñez said.
