The eatery is open seven days a week — 11 a.m. to 11 p.m. Sunday through Thursday and 11 a.m. to 1 a.m. Friday and Saturday. The menu features a variety of handcrafted pizzas, hoagies, salads, calzones and appetizers using the highest quality ingredients. Options for vegetarians, vegans and kids are available, as well as gluten free options.
“Mellow Mushroom is a unique and fun environment for all ages, and with the presence of businesses and families in the area, we could not have asked for a better location,” Molony said.
Molony said he selected West Chester because of its demographics and highly-educated community, high visibility from drive-by traffic, strong corporate presence by companies such as GE Aviation, and accessibility from the interstates and neighboring communities such as Fairfield.
Molony said the “soft opening” Sept. 3 was so successful that it ousted opening day sales from his Kentucky location by an additional 50 percent.
“It was the perfect storm with it being Labor Day and the rain,” Molony said. “We had a waiting list all day, up to two hours long.”
Molony said he chose Mellow Mushroom when deciding the type of franchise to open because “they have the right product.” He said it may take a little longer to build a Mellow Mushroom pizza but the dough is tossed fresh and the ingredients delivered fresh.
“We have wheat-based crust that is not all flour,” Molony said. “We use molasses instead of sugar in the dough. That’s all I can get from (corporate),” he said of the secret recipe.
The West Chester location features sun rooms providing the opportunity for a private dining event, a large dining room and a seasonal covered patio. The restaurant will feature trivia nights, family nights, beer tastings and special events.
To complement the dining experience there is a full service bar with 80 choices of beer and wine and cocktail options. Adventurous guests can join the Mellow Mushroom Beer Club and taste their way through 24 craft beers on draft and an ever-changing bottle selection as they receive members-only rewards.
Each Mellow Mushroom location is designed in a unique art-filled environment — such as a 250-pound wood mushroom inside and the “World’s Largest Marble” ouide weighing a ton. This location plays homage to vintage-era theme parks with tie-dye awnings, images of Ferris wheels, a vending cart hostess stand and pizza cutter toss carnival game.
There is also an illuminated roller coaster artwork that twists and turns throughout the rafters and a Zoltar fortune teller complete with glowing crystal ball.
