Carillon’s brewpub to shut down for 3 days for renovations

“We have some work to do that’s a bit involved, so we picked this slower period between Restaurant Week and Valentine’s Day to jump on it,” Dayton History President and CEO Brady Kress said.

Masons are making repairs to the brewery’s fireplaces, flooring contractors are re-laying portions of the restaurant’s brick floors, and chimney-sweeps are cleaning all four chimney flues, Kress said.

Plans also call for installing a new tap wall and reconfiguring the brewing area to allow more of the brewing process to be visible from the dining area, the Dayton History CEO said. The changes are aligned with what Dayton History has learned while researching 19th century brewing practices.

The restaurant’s seating layout will be tweaked to allow additional space “for guests looking for a quick flight” of beers, Kress said.

“When we open the doors next Wednesday, guests will be welcomed by a brighter and more immersive 1850’s environment,” he said.

Culp’s Cafe, a second restaurant on Carillon Park’s grounds, will be open for breakfast and lunch on the days that Carillon Brewing are temporarily closed.
